When you use baking soda, you need to make sure there is an acid in your recipes. If there is no acid in certain recipes, you can use Featherweight or Rumford baking powder (these are aluminum-free and don't have that after taste like most baking powders do). Unsweetened cocoa powder is a dry acid that can be used when baking with only baking soda. (Source: Five Recipes Using Cocoa Powder). You can orange juice, pineapple juice, brown sugar, crushed pineapple, molasses, cranberries blended with water, and honey.
