Cocoa Apple Cake

2 1/2 cups all-purpose flour
3 eggs
1 1/2 cups sugar
1 cup acceptable unsalted margarine
3/4 teaspoon salt (omit the salt if using salted margarine)
1/2 cup rice milk or water
2 tablespoons unsweetened cocoa
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon allspice
1 cup acceptable chocolate chips
2 to 2 1/2 medium apples, cored and grated
1 tablespoon vanilla

Beat together eggs, sugar, margarine, and rice milk (or water). Add the flour, then the cocoa
powder, baking soda, cinnamon, allspice, and salt .  Mix.  Fold in the chocolate chips, apples,
and vanilla. Place in a greased and floured (or sprayed) 10 inch tube pan. Bake at 325 degrees
F. for 60 to 70 minutes (depending on your oven). Serve with acceptable spray whipped topping
(if desired).
 

Note: If you do not have a dairy-free diet, you can use cow's milk, and ignore the "safe"
ingredients and use chips and margarine you usually use.
